Spicy Fall Hash


  • 1 butternut squash, peeled seeded and ½ inch dice
  • 2 sweet potatoes, peeled and ½ inch dice
  • 1 lb Italian Sausage
  • 1 onion, small diced
  • 3 jalapeno, seeded and small diced
  • 1 container feta cheese


In a large saute pan, brown sausage on high heat, breaking up with a spatula as it cooks. Cook until totally cooked through and browned. Remove sausage and strain off excess grease.

In the same pan add onion & jalapeno. Season with salt and pepper and stir to scrape any sausage bits that stuck to the pan.

Add diced sweet potato and butternut squash, continue to cook over medium heat, stirring occasionally.

Add a ½ cup of water or stock to deglaze and help cook the vegetables. Once the squash and potatoes are cooked through, add sausage back in. Toss to combine.

Adjust seasoning with salt and pepper. Crumble feta cheese on top and serve with protein of your choice or with a few poached or fried eggs.
