Winter Slaw

A cold-weather rendition of a picnic favorite takes full advantage of winter’s harvest. Add bitter radicchio or sweeter red cabbage for a bit of color – or sprinkle dried cranberries, chopped apple and top with poached chicken for a lovely lunch entree!

Ingredients

  • 1 Whole Green Cabbage
  • 1 Celery Root
  • Carolina Flavors Slaw Dress

Optional additions: Raddichio, Red Cabbage, Chopped Apple, Dried Cranberries, Green Onions, Chopped Flat-leaf Parsley

Directions

  1. Remove the outer leaves from the cabbage and cut into quarters. You can either slice the quarters thinly to create a rough julienne, or grate using the coarse side of a box grater for a chunkier, smaller cut.
  2. Using a vegetable peeler, peel around the celery root until all the skin is removed. Cut into quarters, and julienne using which ever above method you prefer.
  3. Toss together in a large bowl, and pour in desired amount of dressing. Season to taste with salt and pepper.
