Veggies Are Important

It is Back-to-School time, so why not read a student’s perspective on vegetables.

I am a tween and I love vegetables. Most kids would ask, “Why do I have to eat it?” Or, they would say, “That’s gross.” 

But not me. I think that vegetables are delicious raw or cooked! 

Vegetables are good for you and they are important to eat so that you can stay healthy. Some of my family’s favorite ways to eat vegetables are:

  • Artichoke hearts wrapped in bacon
  • Raw yellow peppers, carrots and celery with onion dip
  • Corn on the cob
  • Vegetable kabobs with peppers, onions, zucchini and tomatoes
  • Roasted acorn or butternut squash
  • Salad with lettuce, tomatoes, cucumbers, onions and sometimes fruit

My little brother does not like vegetables like I do. So, my mother puts them in dishes and then he eats them. I think every parent should try that. Sometimes I don’t think he even knows the difference. He can’t even taste the vegetables. 

At home we have:

  • Lasagna with squash, onion, and zucchini
  • Soup with carrots, green beans, onions, potatoes and celery
  • Chicken and rice casserole with peas and carrots
  • Mac and cheese with broccoli and chives

I want to try a smoothie with kale next!

We are all going to school now and vegetables are great way for all of us kids to have the energy to study and nutrients to grow. That’s why kids need veggies.
