We have created a rich chicken tortilla soup base with a housemade chicken stock, spice blend thickened with tortillas and pureed. To finish the soup follow the simple recipe below.
- 1 Quart Chicken Tortilla Soup Base
- 1 package of Chicken Thighs
- For Garnish: Avocado, cilantro, lime wedges
Add soup base to a small sauce pot, it may help to thin it out with a bit of water or chicken stock. Add whole raw chicken thighs directly to the soup pot. Turn on medium low heat and gently bring the soup to a simmer. Once it simmers, turn to low to maintain a light simmer. Cover and cook until the chicken is cooked through, approximately 20 minutes. Stir the soup often to prevent scorching. Once the chicken is cooked using two forks pull the chicken apart in the soup to shred.
Serve with diced avocado, cilantro leaves and lime wedges.
