Local Garlic with Skye2Farms
Remember garlic scapes from our Spring menus? Well, our farm partner Skye2Farms is back on the scene with their “beyond organic” garlic! Garlic scapes are the stalk of the garlic plant that shoot up as it undergoes fast growth spurts in the spring and summer. Farmers like Charles King trim these scapes (and eat and sell them!) so that the garlic plant can focus its energy to the bulb, which gets harvested in the late summer. The scapes we sold in the spring come from the very same garlic plants that have now produced flavorful, LOCAL garlic cloves!
Skye2Farms was previously a monocrop Christmas tree farm in the high country of the NC mountains that has been transformed into a biodiverse oasis by Charles King and his family. They follow organic permaculture practices in their farming, focusing on nourishing the soil health, intercropping between annuals and perennials, and encouraging beneficial insects. Remember the free Milkweed seeds we gave out to members this spring? They came from Skye2Farms, too, from the native Milkweed plants scattered across the mountain meadows that attract beneficial bugs like Monarch butterflies and bees.
