It’s that time, y’all! Sweet corn is coming in, and one of our favorite ways to enjoy the summer harvest is making elotes! This easy grilled corn preparation has a cult-following, and we are happy inductees! Follow Chef Beth’s recipe and use ready to made ingredients to bring this festive dish to your table!
Ingredients
- 4 ears of corn
- 1 8oz. Package Carolina Flavors Cilantro lime Mayonnaise
- 1oz. Tajin Spice Mix
- ½ C. Grated Parmesan cheese
Directions
Heat a gas or charcoal grill to high heat. Take corn and place directly onto the grill unshucked.
Remove Corn from the grill and let cool for 3-5 minutes. Once it is cool enough to handle, carefully remove the husk by pulling back and gathering at the end. Using husk like a handle over the stem end of corn.
Using a spoon or brush spread each ear of corn with approximately 1-2 Tb of cilantro lime mayo. Sprinkle with Grated parmesan cheese and finally with tajin spice mix.
Enjoy with an optional squeeze of fresh lime juice and a bit of cilantro if desired.
