Meatball Sub

  • 1 lb of ground beef
  • ½ c. Italian Bread Crumbs
  • 2 eggs
  • ½ C. tomato puree  or ketchup
  • 1 small onion minced fine
  • 1-2 cloves of garlic, minced
  • ¼ C. Shredded parmesan cheese
  • Salt and pepper to taste.
  • 1-2 Tb. Fresh or dried chopped Parsley, Basil, Oregano.

Preheat the oven to 350 F.

In a large  mixing bowl combine all ingredients mixing well and season with salt and pepper. Have a small bowl of water near your work station and dip your hands in cold water, shape mixture into 2-3 inch balls. And set aside on a waiting tray.  Wet hands will keep the meat mixture from sticking to your hands.
You can  cook the meatballs either on the stove top or in the oven. If using the stove top method, heat a large skillet over medium/high heat. Add a bit of vegetable oil. To just coat the bottom of the pan. Add meatballs one at a time to the hot pan, making sure not to over crowd. You will likely need to work in batches. Brown meatballs on all sides, place back on the tray and pop in a 350 oven  for approximately 7-10 minutes to finish cooking through.
For the oven cooking method, place all meatballs on a sheet tray and place in a 375 F oven for approximately 15 minutes, turning once and rotating pan once. Cook until meatballs are nicely browned and cooked through.

To make meatball subs, Slice hoagie rolls and place warmed meatballs ito sub, top  with warmed marinara, slices of Sianno Mozzarella and place in 350 F. oven until bread is  nicely toasted and cheese is melted.
