- 3 Avocado, ripe
- 1-2 jalapeno ( small diced, with or without veins/seeds, depending on your heat preference)
- 2-3 roma tomatoes, small diced
- 1 red onion small diced
- ½-1 bunch cilantro, minced
- Juice of two limes.
Cut avocado in half lengthwise, going around the large pit. Twist to separate the halves. Using a spoon scoop out the flesh of avocados into a large mixing bowl. Discard peel and pits.
Using a fork or potato masher, smash avocado into a nice puree. Add the juice of 1 lime and season with salt and pepper. Next add all diced vegetables, onion, jalapeno, tomato, cilantro.
Stir well to combine, taste and adjust seasoning with more lime juice and salt if necessary.
