Abinta has brought some Indian inspiration to the menu with this traditional dessert – a simple but perfect dessert that celebrates the sweet bounty of summer fruit! Finish with fresh nint and chopped pistachios for added elegance!
- 1 container of CF heavy whipping cream
- Granulated or powdered sugar to taste
- ½ tsp vanilla extract, optional
- 1 container blueberries
- 1 container strawberries
- 2 bananas
- 1 mango
- 1 lemon
In a stand mixer prepare whipping cream. Add 1 container of whipping cream to a stand mixer bowl. Add ½ tsp of vanilla extract and begin whipping on medium high speed. As it begins to thicken, gradually add sugar until desired sweetness is reached. Approximately 2-3 Tb of powdered sugar or ⅓ C granulated sugar. Continue to whip until soft peaks form, set aside in refrigerator.
Wash blueberries well and lightly dry on paper towel. Wash, hull and quarter strawberries and add to a bowl with blueberries. Cut mango and banana into bite sized pieces. Mix with berries. Add juice from half of lemon and stir well.
When ready to serve, mix cream with fruit mixture until nicely coated. Alternatively you can just top the fruit salad with whipped cream if you prefer.
